The lifestyle and food culture celebrated on an estancia, a large South American vineyard estate, is the inspiration for Victor Albisu’s flagship restaurant in the Chinatown neighborhood of Washington, D.C. The airy, 174-seat agrarian space is home to a meat-driven, wine-centric menu that is a product of Albisu’s Latin American roots and travels throughout Argentina, Chile, Peru, and Uruguay.

"I've been here for lunch, happy hour and dinner and the food and drink are spectacular!! The service can definitely use some work. While the waitstaff is kind, I have had an issue with my ire reach and every time I've been here. They could use some additional training to match the high-end quality of the cuisine and restaurant overall."

Authentic, rustic, Italian fare featuring a variety of small plates, house-made charcuteries, breads, cheeses and antipasti. Wood-fired pizzas are also available along with house-made pastas, whole roasted fish and a premiere selection of meats during dinner.

"I thoroughly enjoyed everything about this restaurant. The building was charming, the staff incredibly attentive, the wine was wonderful and the food exquisite. Our waiter gave us an amazing overview on the wines as we described what we were looking for and he did not disappoint. Wow. What a gem! Sorry it took me so long to find it! I will be back and I will bring friends -- again and again!"

Joined at the hip to Red Apron, Chef Anda's groundbreaking butcher and charcuterie shop, the restaurant and bar draws heavily from Anda's line of house made products and relies on the meticulous sourcing that has made Red Apron the first and only butcher shop in the nation to use 100% Animal Welfare Approved pork. Anda and Chef Ed Witt's charcuterie program at The Partisan draws from 100s of cured muscles, pates, and sausages, showcasing over 30 different products on any given night.<br /><br />The balance of the menu is broken up into a series of meat-centric composed dishes highlighting distinctive cuts, cooking techniques, and animal breeds. The portioning encourages sampling, sharing and customizing, which allows guests to construct a completely unique dining experience with each visit.

"The Partisan was everything I expected and more. What a refreshing menu, well-prepared and seasoned food and great staff. The beef fat fries are a must and the country pate was the best I've had in the city!"
