Casa Rubia at Trinity Groves is the new modern tapas restaurant from Chef Omar Flores and Jonn Baudoin. Chef Omar's menu will spotlight seasonal ingredients taking classics, putting a spin on them and making them with his flair. Catalonia is a favorite area in Spain for Chef Omar so the menu utilizes a lot of seafood. Paellas is a signature dish at Casa Rubia which changes daily. A full Spanish wine list, nice selection of sherries and Spanish / South American beers compliment the tapas menu.

"It was good to be back for a return visit that proved to be as enjoyable as the previous ones. We started with the charcuterie plate, which featured a carefully selected assortment of meats, cheeses, and other goodies. We then had the nightly special featuring mussels in a delicious broth, as well as the shrimp and the scallops.
Casa Rubia is a fun place to try new flavors and share dishes with friends. With the tapas concept, it's possible to try several different dishes, and the waitstaff is helpful with wine pairing selections. And the paella is delicious if your group wants to go in that direction.
Trinity Groves is the new hot spot in town and is not to be missed, as is this restaurant.
