Everyday we prepare natural foods utilizing the highest quality ingredients from local farmers, artisans and ranchers in Colorado, whenever possible.<br /><br />We partner with only sustainable oyster farms and fisheries and have our seafood flown in from around the world. We create daily specials, allowing the seasons to influence us in hopes of provoking your senses and take them from classic, nostalgic flavors to new, inspired dishes. At Spruce you know exactly where your food comes from. <br /> <br />From farm to fish, oysters and wine-simply enjoyable, and the way it should be!<br />

The Blue Spruce Inn has been a Summit County dining tradition since the 1940’s and was voted Best Restaurant and Saloon in Summit County in 2010. We offer fine dining in a rustic log cabin atmosphere. Our menu encompasses the best steak, seafood and wild game as well as kobe burgers in the saloon. The entire staff of The Blue Spruce Inn welcomes you, and hopes your visit will be most enjoyable.

Basta is a wood fire eatery committed to providing house made specialties like roasted half chicken and whole striped bass as well as classic gourmet pizzas. Hand made pastas and oysters also make regular appearances on the menu. The wine and beer list is centered around small artisan producers, with a rotating craft beer selection on draft. Chef Kelly Whitaker concentrates on locally grown produce, meats and domestic charcuterie to create the foundation for his unique wood fire menu. <br />

"Although we frequent Pizzeria Basta for Friday lunch, we rarely have diviner there. The "First Bite Boulder" menu attracted us, and we were not disappointed. The smoked oysters were superb, and the rabbit confit and Waygu meatloaf were equally delicious. Service was friendly and spot on. Bravo Basta!"

We're celebrating our 22th Year in Sunny Dundee by doing what we do best. cooking memorable meals for our friends and neighbors. Welcome to sunny Dundee!<br /><br />We opened Tina's in October 1991, after cooking in Portland for over 10 years. We have a small bar, two intimate dining rooms separated by a fireplace; we seat 50 guests. <br />Our search for locally grown, organic foods led us out of the city and into the countryside where we work closely with a great group of farmers, ranchers and fisherman. We're closer to the source of what goes onto your plate, and we believe that the opportunity to cook in a wine growing region lends our food a context, flavor and experience that is unbeatable. <br /><br />We are committed to using the best ingredients, and our menu is based on the foods that our farmer/neighbors grow. The wines that we feature are from just up the hill; our staff has a deep knowledge of this place. Our menu changes as we move through the seasons of the year.
