Chef Tim Ma a native Northern Virginian is dedicated to creating fun and innovative dining experiences. Leaving behind his career as an engineer, he attended the French Culinary Institute to pursue a profession in the food industry. Fast forward to the present, he opened his first restaurant in 2009 and Water & Wall in 2013. While he no longer operates his first restaurant, he is fully dedicated to make Water & Wall a restaurant for the community, he is opening Chase the Submarine in Vienna in summer 2015 and a restaurant in DC at the end of 2015.

As the only Forbes five star rated restaurant in Washington, DC, Plume at The Jefferson hotel serves as a discreet and elegant backdrop to the artistry of our award-winning culinary team. Choose a cozy nook or a table by our inviting fireplace as you savor classic dishes crafted using traditional techniques and seasonal fine dining restaurant menus that are inspired by the harvest from Thomas Jefferson's kitchen gardens at Monticello.

Plume's wine list spans more than a dozen nationalities and consists of over 1,300 labels, including the country's largest Madeira collection dating back to 1850. The wine selection consists of over 50 vintages, many of which we believe Jefferson himself would have enjoyed were he alive today, including a range of labels from his native Virginia.
"Most beautiful dining room in the city - it's a wonderful refined escape in the heart of Washington. The food is superbly presented and out-of-this-world delicious. The deer saddle and duck entrees are devine. Save room for dessert. The pineapple dolce de leche predessert is an amazing combination of flavors. Everything Chocolate mey be the best chocoate dessert ever. The service is pampering without being intrusive. The sommelier is a rare combination of warm and fantastically knowledgable. Let her do her thing and she'll come up with SPECTACULAR pairings that take the whole experience to another level!"
