He was a top graduate of San Francisco Culinary Academy and was awarded 3 gold medals at the Culinary Olympics, in Germany. His wife Rhonda also graduated at the top of her class in Portland, Maine Culinary school and was the Executive pastry chef for number of years. Together they developed menu items that span from the International Classics to more extraordinary and adventurous.

"Our first time here. My wife had heard about it and the Open Table reviews were very helpful. So we decided to give it a try. We were certainly not disappointed. Each plate comes out looking like artwork. Thought twice before digging into it. Enjoy but keep in mind you must have the time to dine here. This is not faster food. You will not be out in an hour. Lots of courses all carefully and custom prepared."

"Food was wonderful and only issue was that twice they sent out an improperly cooked Filet for one of the four of us. To be fair she ordered it very well done and frankly I personally think that is ruining meat but she did order it that way so they should have given it to her that way. Starters and sides were really good."

Council Oak Steaks & Seafood, the highly acclaimed world-class gourmet restaurant at the Seminole Hard Rock Hotel & Casino. Council Oak offers genuine, 100% U.S.D.A. prime dry-aged stockyard beef from a butcher shop located in the front of the restaurant. The freshest line-caught seafood from local waters, plus king crab legs are flown in fresh from the Bering Sea from the boats that are featured on the Discovery Channel hit show, World's Deadliest Catch. Council Oak also features an extensive wine-by-the-glass selection and intimate wine-bar seating. Live entertainment is offered nightly in a separate lounge area and Sunday brunches complete with a chocolate fountain dessert station set the standard even higher.

"This is my second time to Council Oak. The three with me loved their meal. I made the mistake of ordering, following the server's suggestion, the Prime Rib which is not always available. It was terrible. Chewy, fatty and dried out like the Yorkshire Pudding was. Rest of the meal was very good. So my score above excludes my personal bad experience and rates based on what the other three felt about their meals when ordering filets and sea bass. Sides were nice. Service very attentive."

The word” Estia” is derived from Hestia, Goddess of the Hearth. Hestia in Greek means fireplace (hearth) and focus, core, center, source, seat, breeding –ground, hotbed, spot. The Goddess Hestia is the center of home, the welcoming warming fire at the heart of home. Her duty is to always keep the fire burning, a source of light and warmth.

"We just came back from about two weeks in Greece and after about a week home decided to return to our American Greek restaurant of choice. Frankly while we had some real good meals in Greece I have to say that I like the food better at Estia. Friendly service of very good Greek food. The pita and hummus are wonderful. I had the gyro which I missed since so different in Greece. My wife had the fish cleaned up tableside. Both excellent. Enjoy!!"
